An Infernot is a small underground cellar where the absence of light and natural ventilation maintains constant temperature and humidity throughout the year, making it ideal for the excellent preservation of the most precious bottles.

These small natural cellars were hand-carved into Pietra da Cantoni, a sandstone formed by the sediment of the sea that covered the territory millions of years ago.

Each Infernot is now an evocative testament to the rich local cultural heritage, one of the components of the "Vineyard Landscapes of Piedmont: Langhe-Roero and Monferrato", a UNESCO site since 2014.
